In Sri Lanka, cinnamon harvesting is a recognised craftsmanship, often inherited in the family. Ananda’s Cinnamon and ALBA cinnamon are the highest qualities in real cinnamon and are derived from the thinnest and most aromatic pieces of inner tree bark. Only the most skilled and experienced cutters produce cinnamon of Mill & Mortar quality. Machine-cut Cassia cinnamon from Sri Lanka can be identified by looking at the ends that appear like tight-rolled cigars and that crumble between the fingers.
